It’s been a funny week, as you all know I was living off WW2 rations last week and I have found it quite hard to get back into the swing of things since then!I enjoyed my week in the Wartime Kitchen and if any of you are interested in replicating the recipes at home, they are all here: Wartime Kitchen – Ration Book Cooking. It was a very humblingexperienceand when I came to plan my meals this week, I was mindful of just how times have changed when it comes to portion sizes and ingredients; so, I am trying to be just as frugal, which, will be great for my ongoing diet (which was paused last week) as well as my bank balance. One of my favourite autumn or winter meals is a good sausage casserole, and even with a small packet of sausages, asubstitutionalfamilymeal can bemade.I am a bit of a food snob when it comes to sausages, I only buy ones that are made with British meat,preferablymade locally andthathave ahighmeatcontent. In my opinion, it’s a false economy to buy cheap ones with a high ratio of bread meal, soya and all the other padding agents that are frequently added to those grey sorry-looking sausages.

I will be sharing this warming sausage casserole recipe with you later, but for now, here is my meal plan, and you may notice that I am back on my 5:2 Diet plan, but only for one day this week, and then two days next week as normal. Lunch: Coronation Potato Salad with Lettuce (recipe to follow -140 cals)

1 slice of WW Chicken Roll (49 cals)

TOTAL: 189 cals

Tea: Meat-Free Scotch Broth(146 cals)

Milk allowance: 150mls skimmed milk (51 cals)

TOTAL: 438 cals

(Might have a small apple for TV snack – 59 cals = 497 cals)

Thursday 15th November:

Breakfast: Boiled eggs and home-made bread

Lunch: Soup – may make a leek and potato soup

Tea:Oven Baked Chicken and Aubergine (Egg Plant) Parmigiana

A delicious sausage casserole with "hidden" fruit and vegetables; apples and parsnips add a sweetness to this hearty family dish and if you can substitute the cider with apple juice if you wish. Try to use top quality butcher's sausages with a minimum of 70% meat content - pork sausages are a perfect match, but you can notch this recipe up by using venison sausages and serving the casserole with spiced red cabbage.

Ingredients

  • 450g pork sausages (or sausages of your choice)
  • 12 fresh sage leaves, finely chopped
  • 2 cloves of garlic, crushed
  • 2 tablespoons tomato puree
  • 275ml dry cider
  • 1 heaped tsp plain flour
  • 2 small parsnips, peeled and sliced
  • 2 apples, sliced and cored, but not peeled (I used Russets)
  • 2 medium onions, peeled and chopped
  • 1 tbsp vegetable oil
  • salt and pepper to taste

Directions

Step 1 Pre-heat the oven to 180C/350F/gas mark 4.
Step 2 Take a large oven-proof casserole, heat the oil in it and brown the sausages all round. Then, using a slotted spoon, remove them to a plate while you brown the onions lightly. When they are done, sprinkle in the flour to soak up the juices, then gradually stir in the cider,before adding the tomato purée.
Step 3 Put the sausages back in, plus the apples, parsnips, garlic, chopped sage leaves and a little seasoning; put a lid on when it all comes to simmering point and then transfer to the oven for 30 minutes.
Step 4 When the 30 minutes is up, remove the lid and cook for a further 20-30 minutes.Serve immediately with mashed potatoes.
